Along California’s Central Coast — where Monterey Bay meets the rugged beauty of Big Sur — we discovered that exceptional caramel is not rushed, but slowly coaxed to life through patience, warmth, and tradition.

Inspired by more than three decades of family caramel-making along the Oregon Coast and reimagined in Carmel-by-the-Sea, each batch reflects the spirit of coastal living: salt air, gathering around the table, and the simple beauty of sharing something thoughtfully made.

Every batch is a conversation between fire and time, resulting in something both nostalgic and elevated — rich, buttery, softly finished with sea salt, and deeply connected to the place it came from.

The Beginning

For more than thirty years, caramel-making quietly wove its way through our family life along the Oregon Coast — from coastal gatherings to holidays shared between siblings, cousins, and generations around the kitchen. Recipes were passed hand to hand, shaped more by memory and tradition than measurement.

Years later, I found my way to California’s Central Coast and fell in love with the beauty of Carmel-by-the-Sea, Monterey Bay, and Big Sur. What began as home eventually became inspiration. The rugged coastline, the salt air, the warmth of gathering, and the spirit of hospitality felt deeply familiar — connected somehow to the coastal traditions I had carried with me for years.

While baking itself was never my profession, entrepreneurship and creative hospitality have always been at the center of my work. Over time, I realized these family recipes deserved more than occasional gatherings and handwritten recipe cards. They deserved to become an experience others could share. And so, Caramel by C was born — rooted in family tradition, inspired by the California coast, and created to bring together thoughtful gifting, artisan craftsmanship, and the timeless beauty of coastal living.

The Craft

Every batch of Caramel by C is handcrafted in small batches in Carmel-by-the-Sea using thoughtfully selected ingredients and a process that favors patience over shortcuts.

Slowly cooked to develop rich depth and warmth, our caramels are inspired by the landscape that surrounds us — the salt air of Monterey Bay, the rugged beauty of Big Sur, and the golden warmth of the Carmel coastline.

The result is a caramel that feels both nostalgic and elevated: buttery, rich, softly finished with sea salt, and deeply connected to the place it came from.
